Molekylærmikrobiologiske studier av melkesyrebakterier for bioteknologisk anvendelse

Sammendrag

Lactic acid bacteria have obtained much attention in microbial biotechnology due to their importance in food and feed fermentation. The recent concern of "new" and increased frequency of pathogenic bacteria in food as well as the problems with "new" antibiotic resistant bacteria in the environment (also food) of man has triggered study of new means how to fight these serious problems. The present project will continue the effort to make lactic acid bacteria more versatile in application in improving the microbial quality of food. Work on the antimicrobioal peptides (bacteriocins) will continue in order to find ways to make bacteriocins more efficient in conditions. The activity is considerably reduced in a food product for reasons that are basically unknown. The project will be of a key issue to investigate the presence or absence of targe molecules (receptors or docking molecules) in bacteria.
